Bansi is an Indian durum wheat , which is a beautiful golden colour wheat.
Bansi is a durum wheat, and the scientific name is Triticum turgidum durum.
Durum is different from bread wheat , which is the most commonly used wheat. Durum has less chromosomes and simpler proteins.
Bansi wheat HAS gluten. No wheat is gluten free

The Story

Bio Basics gets it's Bansi wheat from a small collective of tribal farmers who farm organically  in Jhabua, Madhya Pradesh. The bhil tribal farmers who now grow multiple varieties of heritage wheat have become the guardians of these seeds.

The tall plant that almost comes to a person height carries this grain.  Today very few farmers grow Bansi , many modern day short durum wheats have replaced Bansi , the main one being Tejas and most of the Bansi Dalia one gets in the market is improved Tejas wheat Dalia.

Health

Bansi wheat  . Unchanged since 1000s of years the protein structure of this wheat is simpler.

Bansi has fairly low GI and low gluten and is easily digestible due to simpler proteins. Bansi wheat can be tolerated by many who have minor intolerance to gluten. Such people could try this wheat under doctors or dieticians advice.

Storage Instruction

Buy enough wheat flour for a month and not more. Store the wheat in a cool dry place or refrigerate it .

If you are keeping it longer than a month, please refrigerate to avoid infestation.

If you are a baker we recommend you buy the wheat and mill it fresh at your facility.

Cook

The Bansi wheat flour makes delicious rotis  and puris. It has a beautiful golden colour Mix the dough, let it rest and then roll out the rotis or parathas.  The wheat flour has more the property of extensibility and lacks that much elasticity making it a good option for pasta and Kerala Parotta.Bansi is definitely worth a try for making home made pasta.
